Garden Salad with Calamansi Dressing
Calamansi lime or locally known as limau kasturi, is widely available in Malaysia and other Southeast Asian countries like Singapore, Thailand, Indonesia and the Philippines. It's commonly paired with sambal belacan, a condiment that is popular in the Malay cuisine. Makes a nice substitute for lemon juice in salad dressing. The use of calamansi lime calls for some sugar as it tends to be more tart than lemon juice.

Red veined sorrel
Crisp lettuce
Radicchio
Snow pea shoot
Mizuna
Cherry tomatoes
Red onion
6 calamansi limes
salt

black pepper
olive oil

Place the assortment of salad in a bowl. Top with the remaining salad ingredients like halved cherry tomatoes and sliced onion.
In another bowl, squeeze calamansi limes. Combine it with salt, sugar, black pepper and olive oil. Drizzle over salad and give it a good toss.
