Kuini Salad

Simple salad using common salad ingredients like tomatoes, cucumber and lettuce. Healthy and refreshing. The kuini, a juicy stone fruit from the mango family, adds sweetness to the overall recipe. Its vibrant yellow contrasts beautifully with the red from the tomatoes and the green from the leafy vegetables. Great to have on a hot day.



Kuini Salad
1 cucumber
2 tomatoes
1 kuini or mango
a few lettuce leaves
2 sprigs of coriander leaves
juice of 1/2 lemon
extra virgin olive oil
salt and freshly ground black pepper, to taste

Slice cucumber and cut tomatoes into wedges. Then slice kuini and cut into strips. Leave lettuce leaves whole. Pluck the coriander leaves off the stem.

Combine cucumber, tomatoes, lettuce and coriander in a bowl. Toss the vegetables with lemon juice.  Then add the kuini and toss slowly. Lastly, drizzle with olive oil and season to taste with salt and pepper.
