Quinoa Salad with Frozen Vegetables

1/2 cup quinoa
1 cup water
1/2 shallot, sliced thinly
1 cup frozen mixed vegetables
2 tbsp apple cider vinegar
1/2 tsp honey
2 tbsp olive oil
salt
black pepper

Bring quinoa and water to a boil in a pot. Reduce heat to medium-low and simmer until quinoa is tender, about 10-15 minutes. Set aside to cool.

In a bowl, whisk apple cider vinegar, honey, and olive oil.

Combine quinoa, shallot, frozen mixed vegetable in a bowl. Pour dressing over quinoa mixture and toss to coat. Season with salt and pepper. Serve.
