Potato Salad with Beef Bacon
2 potatoes
2 sweet potatoes
2 slices beef bacon
1 spring onion
1 sprig fresh dill
2" red radish
3 tbsp plain yoghurt
2 tsp mayonnaise
1/2 tsp radish
salt
black pepper
oil

Boil potatoes and sweet potatoes in salted boiling water until tender. Drain the potaotes and them cool down before removing the skin. Then cut into small chunks and set it aside.

Cut beef bacon into bite-size pieces. Heat oil and fry beef bacon. Set it aside too.

In a medium-size bowl, add potatoes, sweet potatoes, red radish, beef bacon and spring onion. In a small bowl, mix plain yoghurt, mayonnaise and radish and pour into the other bowl. Season with salt and black pepper. Toss all the ingredients together. Refrigerate and sprinkle with fresh dill when serving.
